Crispy Grilled Chicken Thighs – Phase 3

Ingredients

Directions

  • Combine the safflower mayonnaise, chili powder, cayenne and 1/2 teaspoon salt in a large bowl. Add the chicken and toss to coat. Cover and refrigerate at least 2 hours or overnight.
  • Preheat a grill to medium low. Brush the grill grates with olive oil. Place the breadcrumbs in a shallow dish, then add the chicken, turning to thoroughly coat.
  • Grill the chicken, turning once, until golden brown and cooked through, 20 to 25 minutes per side.
  • Meanwhile, brush the tomatoes with olive oil and season with salt and black pepper. Place cut-side down on the grill and cook until marked, about 4 minutes per side. Serve with the chicken3 Healthy Recipes to Cook this Father's Day Surf and Turf Gumbo – Phase 3

Ingredients

  • 1/2 cup plus 1 tablespoon olive oil
  • 1/2 cup almond flour
  • 8 ounces  nitrate-free sausage, cut into 1/2-inch pieces
  • 1 1/2 pounds boneless skinless chicken thighs, quartered
  • Sea salt and freshly ground black pepper
  • 1 tablespoon tomato paste
  • 2 ribs celery, chopped (about 1 cup)
  • 1 large onion, chopped (about 2 cups)
  • 1 green bell pepper, chopped (about 1 1/2 cups)
  • 1/4 teaspoon cayenne pepper
  • 4 cloves garlic, finely chopped
  • 4 cups chicken broth
  • 2 tablespoons pickling spice
  • 1 1/2 pounds medium shrimp, 21-25 count, peeled and deveined, tails removed
  • 2 Okras (substitute for gumbo file)
  • Hot cooked quinoa, for serving

Directions:

  • In a cast-iron or other heavy-bottomed skillet, heat 1/2 cup of the olive oil over medium-high heat until very hot.
  • Add the almond flour and whisk until combined and just beginning to brown. Reduce the heat to medium-low and continue to cook, whisking occasionally, until it is a deep peanut butter brown color, 15 minutes. Set aside.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a Dutch oven or large pot over medium heat.
  • Add the sausage and cook until it is lightly browned. Remove with a slotted spoon to a bowl. Sprinkle the chicken pieces with 1/2 teaspoon salt and 1/4 teaspoon pepper and brown in the sausage drippings.
  • Remove from the pot and place in the bowl with the sausage. Stir in the tomato paste until smooth and darkens slightly (be careful not to burn), about 1 minute.
  • Add the celery, onions, peppers and cayenne to the pot and continue to cook until softened, 8 to 10 minutes. Add the garlic and cook until just aromatic, about 30 seconds.
  • Add the chicken broth and 2 cups water and bring to a simmer. Slowly whisk in the warm roux, a bit at a time, until combined.
  • Tie the pricking spice and add to the pot along with the chicken and sausage. Simmer all together until thickened and the flavors have blended, about 45 minutes.
  • Add the shrimp and okra and simmer until the shrimp are just cooked through and the gumbo has thickened, about 5 minutes.
  • Discard the pickling spice bundle. Taste and adjust seasoning with additional salt and pepper. Serve the gumbo over quinoa.
  • Note: Pickling spice contains chilies, coriander, cumin, ginger, black pepper, allspice, cinnamon, bay leaves, brown mustard, cloves and turmeric. You can make your own it you can’t find it premade.

Grilled Chicken with Strawberry and Pineapple Salsa – Phase 1

Grilled Chicken with Strawberry and Pineapple Salsa Memorial Day Phase 1 Recipe

Ingredients:

  • 2 slices pineapple, each 1/2 inch thick, patted dry
  • 1 cup whole strawberries, diced
  • 1/4 cup finely chopped red onion
  • 3-4 tablespoons chopped, fresh mint leaves
  • 1-2 teaspoons of stevia
  • 1/8 teaspoon crushed red pepper flakes

Chicken:

  • 1 medium lemon
  • 4 boneless, skinless chicken breasts, halved (about 4 ounces each), all visible fat discarded
  • 2 teaspoons barbecue sauce (Link of the recipe here Note: Substitute brown sugar to stevia)
  • 1/4 teaspoon sea salt

Instruction:

  1. Preheat the grill on medium high. Heat the grill pan or rack on the grill for about 2 minutes, or until hot. Grill the pineapple for 2 minutes on each side. Transfer to a cutting board and let cool slightly, about 2 minutes, before chopping.
  2. Meanwhile, in a medium bowl, stir together the remaining salsa ingredients except the lemon. Grate 1 teaspoon lemon zest, reserving the lemon. Stir the zest and chopped pineapple into the strawberry mixture. Set aside.
  3. Sprinkle both sides of the chicken with the barbecue sauce and sea salt. Grill for 5 minutes on each side, or until no longer pink in the center. Transfer to plates. Squeeze the reserved lemon over the chicken. Serve with the salsa on the side.

It improves your health, decreases your risks of chronic diseases, having a positive mood to face the day,  and contributes in your weight control. Having enough sleep will help you in staying away from caffeine and sugar cravings.

5. Just enjoy and love what you’re doing – Last but not the least, you need to stay positive, enjoy and love what you’re doing. Remember that you’re doing this diet because you love your body. You want to give what’s the best for your body.

I have been trying to lose weight for several years. Once I finally got my thyroid levels correct I started to lose weight very slowly. Then a friend of mine on SparkPeople.com. which a social network for people who are trying to lose weight in a healthy way. Anyway, she kept blogging about how she was losing weight just by eating according to the FMD plan. I was really skeptical at first but the more she blogged about it the more I wanted to try it. I finally bought the book and I lost 10 pounds the first 28 days with minimal exercise. The 2nd 28 days I lost 15 pounds doing more exercise but still according to the guidelines in the book. I have a lot of endocrine issues due to a brain tumor that I had removed when I was young. I’m happy to say now that I have taken off more than 33 pounds. I love the eating plan! I feel better mentally and physically. I sleep better and am probably the happiest I’ve ever been. I went from a size 10 to a size 2. I still can’t believe I can wear a size 2! Doing the Fast Metabolism Diet was/is the best think I could have ever done for myself. One year ago, I started the FMD. My mother-in-law thought I might like the book–she knew I was trying to lose weight and get in control of my diabetes. My sugars were on the rise and my doctor said I’d need to go on medication unless something changed drastically.

I have done so many fad diets in my life that I had all but given up on my metabolism. Nothing seemed to work anymore. I was discouraged and depressed. Especially because I thought I was eating pretty darned healthy already.

But . . .

I read the book. I decided to make it a game. I knew some things would be hard (e.g. giving up cheese, nuts, and scotch every night as a snack) but I’m very competitive. I told myself I could win.

I didn’t cheat along the way. I stuck to the plan. I still do.

It’s been one year of eating healthy, exercising, and gaining control of my health to the extent that I can control it.

I’ve lost 50+ pounds to date. My pant size went from a 36-inch waist to a 30-inch waste. And, though it’s all in my mind . . . I feel taller.

I’m 46. I now weigh what I did in high school. I should have saved my high school clothes. They’re back in style and they’d fit me now. For fun, the other day I put on my high school choir tuxedo jacket and it fit me. Crazy.

My body was weak. I hated exercise. Not anymore. I used to not be able to even do one chin-up. Now, I have a chin-up bar in my office that gets regular use. I look forward to exercise and weight training.

My sugars are amazing. My doctor says to keep doing whatever it is I’m doing.

What I’m doing is sticking to this new lifestyle. I eat amazing food. I eat plenty. I enjoy my life. I look great. I feel great. Opps, gotta go. Time for a snack and some water. Thank you, Haylie!”
