Ingredients:

  • 20 ounces frozen, chopped spinach, thawed
  • 2 1/2 cups fresh or frozen fava beans, thawed
  • 4 1/2 cups cooked quinoa
  • 6 medium garlic cloves, minced
  • 1 1/2 teaspoons fine sea salt
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 3/4 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon freshly ground black pepper
  • 4 egg whites
  • Lemon wedges to serve

Directions:

  1. Preheat oven to 400 degrees. Squeeze out as much water as possible from the spinach and place in a large mixing bowl.
  2. Bring a medium pot of salted water to a boil. Add the fava beans and cook for 3 minutes. Drain them and place them in the bowl of a food processor, pulsing until coarse puree forms. Add to the mixing bowl with the spinach.
  3. Stir in the next 8 ingredients (quinoa through pepper). Stir in the egg whites until well combined.
  4. Form into 12 patties and place on a parchment-lined baking sheet. Bake for 20 minutes. Flip and bake for another 5 minutes. Sprinkle with a little more sea salt and fresh black pepper, and serve with lemon wedges.

Don’t have enough time to prepare a proper Fast Metabolism Diet meal for breakfast? Here is a delicious dish that you can cook in no time at all!

Servings: 2 | Prep time: 10 minutes | Total time: 45 minutes

Ingredients:

  • 6 egg whites (or 1 cup liquid egg whites)
  • 1 cup sliced fresh mushrooms
  • 1 cup chopped broccoli florets
  • 1/4 teaspoon cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon freshly ground black pepper
  • 2 bell peppers, halved and cored
  • Chopped fresh cilantro
  • Hot sauce

Directions:

  1. Preheat the oven to 375 degrees.
  2. In a bowl, mix together the first 8 ingredients (egg whites through black pepper).
  3. Place the bell pepper halves in a baking dish, and fill them with the egg white mixture.
  4. Bake 35 minutes, or until the egg whites are set. Sprinkle with cilantro, and serve with your favorite hot sauce.

Finished with Phase 1 and 2? Then let’s go on to the Phase 3 of the Fast Metabolism Diet!

This phase is for the Fridays, Saturdays, and Sundays of every week and is composed of foods containing healthy fats and oil. This is also the most active part of the Fast Metabolism Diet, so, you will be able to consume a moderate amount of carbs, proteins, and fruits or veggies.

Here are foods that you can eat on Phase 3:

  • Vegetables- Artichokes, Brussels sprouts, green beans, beets, butternut squash, French beans, bok choy, cauliflower, kale, radish, watercress, leek, zucchini, celery, wax beans, asparagus, spinach, sweet potato, all types of onions, lettuce (except iceberg), collard greens, fennel, eggplant, garlic, green onions, peppers, rhubarb, shallots, okra, tomatoes, celery, cabbage, palm hearts, mushrooms, olives, cucumbers, and bean sprouts.

Oatmeal Pumpkin Cookies

Ingredients:

  • 1 cup old-fashioned oats
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup birch xylitol
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon sea salt
  • 2 eggs
  • 3/4 cup organic canned pumpkin
  • 1/2 cup raw almond butter
  • 1/2 cup raw walnuts, chopped

Directions:

  • Preheat oven to 350 F. Line a large baking sheet with parchment paper.
  • In a large bowl, combine the oats, coconut flour, shredded coconut, xylitol, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
