Chocolate-Dipped Vanilla Bean Macaroons – Phase 3

Serves: 3 Macaroons

Chocolate-Dipped Vanilla Bean Macaroons - Phase 3

Serving Size: 3 macaroons

Ingredients:

  • 1 cup (250 mL) raw almonds, ground into a fine meal
  • 1½ cups (375 mL) unsweetened shredded coconut flakes
  • ½ teaspoon plus ⅛ teaspoon (2.5 mL) sea salt
  • ½ teaspoon (2 mL) ground cinnamon
  • ½ cup (125 mL) stevia
  • ¼ cup (2 ounces/60 g) coconut butter, melted
  • 2 tablespoon pure vanilla extract
  • 3½ ounces (100 g) cacao powder
  • 1 teaspoon (5 mL) virgin coconut oil

Directions:

  1. Preheat the oven to 275°F (140°C). Line a baking sheet with parchment paper. Line a large plate with parchment paper.
  2. In a large bowl, stir together the ground almonds, shredded coconut, salt, cinnamon, stevia, melted coconut butter, and vanilla extract until thoroughly combined. The dough will be thick and sticky.
  3. With a 2-tablespoon (30 mL) retractable cookie scoop, scoop a ball of dough and pack it in so the top is flat. Release the dough onto the prepared baking sheet. Repeat with the rest of the dough, setting the macaroons about 2 inches (5 cm) apart on the baking sheet.
  4. Bake for 15 minutes, then rotate the pan and bake for 10 to 15 minutes more, until the macaroons are a bit golden around the edges. Watch them closely during the last 5 to 10 minutes.
  5. Let cool on the baking sheet for 10 minutes, then carefully transfer to a cooling rack to cool completely.
  6. In the top of a double boiler, melt the cocoa powder and coconut oil together over low-medium heat, stirring frequently until smooth. (Alternatively, melt them together in a small pot over low heat, stirring frequently.) Turn off the heat.
  7. Dip the flat base of each cooled macaroon into the chocolate and twirl the macaroon until the base is coated in chocolate. As you dip them, place each macaroon onto the parchment paper-lined plate, upside down, so the chocolate coating is facing upward. Freeze the macaroons for 10 to 15 minutes, or until the chocolate has hardened.
  8. Flip each macaroon chocolate-side down and drizzle the remaining chocolate on top (reheat the chocolate until liquid, if necessary). Freeze for 5 to 10 minutes, until the chocolate drizzle is firm.
  9. Store leftover macaroons in an airtight container in the fridge for up to 1 week. You can also wrap the macaroons in foil, place them in an airtight container or freezer-safe zip-top bag, and freeze for up to 1 month.

Wear the right clothes. This is not the season to use your favorite cotton shirt. Wear clothing that has wool or jackets with insulating synthetics. Layer-up your clothes to keep you warm. Woolen or fleece hats and thick woolen socks can also help your body warm up and keep you dry.

At night close your curtains. Your windows help in letting in more radiant energy in the morning from the sunlight that enters your house. Serves: 6
Serving Size: 4 meatballs
Ingredients:

  • 20 oz. ground turkey
  • 1/3 cup sprouted wheat bread crumbs
  • 3 tbsp. Almond milk
  • 1 large egg
  • 3 cloves garlic, finely chopped
  • 1 tbsp. loosely packed fresh rosemary leaves, finely chopped
  • 4 oz. cashew cheese, cut into 1/2″ cubes
  • 2 tbsp. olive oil
  • 2 cup of crushed tomatoes
  • Parsley leaves, for garnish
  • Grated Cashew Cheese, for garnish
  • Sprouted Bread or Konjac Noodle Pasta, for serving

Directions:

  1. In a large bowl, combine turkey, bread crumbs, almond milk, egg, garlic, rosemary, 1/4 teaspoon salt and 1/2 teaspoon pepper.
  2. With a 2-tablespoon scoop, scoop turkey mixture and press 1 cube of cashew cheese into the center, sealing meat tightly around cheese. Repeat with remaining turkey mixture and cheese.
  3. In 12″ skillet, heat oil on medium-high. Add turkey meatballs; cook for 10 minutes or until browned on most sides. Add crushed tomatoes.
  4. Reduce heat to medium-low. Simmer for 12 minutes or until meatballs is cooked through.
  5. Garnish with parsley and grated cashew cheese. Serve with bread or over pasta.

CREAMY WHITE STRAWBERRY GHOST – PHASE 1

Yield: 2 1/2 dozen of a creamy white strawberry ghost.

Serving Size: 1 coated strawberry

Ingredients:

Directions:

1. Mix equal amounts of egg whites with rice milk to make a low-calorie heavy cream substitute. Mix the ingredients until there are no more lumps in your mixture.

2. Wash strawberries and gently pat with paper towels until completely dry.

3. Dip the Strawberries in the heavy cream mixture and freeze for 30 minutes.

4. In a microwave, melt 1/2 cup of raw cocoa powder until smooth. Dip a toothpick into melted chocolate and draw a mouth and eyes on each ghost. You can also draw ghost’s tails.

This spooky raspberry chocolate pudding has a rich chocolate taste and is very smooth and silky blended with tangy flavors of raspberry. It’s dairy and egg-free that can also be served as a chocolate dip.

SPOOKY RASPBERRY CHOCOLATE PUDDING – PHASE 3

Serving Size: 1 cup of Spooky Raspberry Chocolate Pudding

Ingredients: 

  • 1 1/2 cups of raspberries
  • 1/3 cup coconut milk
  • 4-6 drops stevia
  • 1/2 teaspoon lemon juice (from squeezed lemons)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plus 1 tbsp cacao powder
  • 3 tablespoons melted coconut oil

Directions: 

  1. Blend all but the coconut oil until smooth and creamy.
  2. Add the oil and blend again to incorporate.
  3. Chill for at least 4 hours or cold and thickened.
  4. You can add chia seeds and raw cacao nibs as toppings. Serve and enjoy!

Jack o Lantern Fruit Salad Recipe – Phase 1

If you’re up for some super-quick, bake-free recipe to enjoy this Halloween, then this Jack o Lantern Fruit Salad is your life-saver recipe! No baking or cooking needed to create this recipe. You just have to chop fruits, assemble them, and voila! You already have your spooky and appetizing fruit salad in Phase 1! An easy, dipsy treat!

JACK O LANTERN FRUIT SALAD RECIPE – PHASE 1

Serving Size: 1 Jack o Lantern fruit salad. 

Ingredients: 

  • Assorted fruits, strawberries, pineapple, mangoes,  apples, or any fruits allowed in Phase 1.
  • Oranges
  • Mint leaves

Directions: 

1. Chop the assorted fruits and mix them in a large bowl. You will need about ½ cup per orange.

2. To carve a pumpkin cup, slice off the top of the orange, using a knife to loosen the edges, scoop out the inside of the orange with a spoon. Toss the juice in with the fruit.

3. Carve a small jack-o-lantern face in each orange.

4. Fill each orange with fruit and replace it’s top.

5. As a finishing touch, garnish each top with mint leaves for stems. Serve and enjoy!

These cheesy and fluffy Monster Eyes bites are incredibly easy to make. You can use this as a bonding session with your kids as you bake these.

Yields: 4 1/2 dozen

Serving Size: 2 Cheesy Monster Eyes

Ingredients:

Directions:

1. Preheat oven to 400°.

2. Combine baking mix, sausage, and cheese in a big bowl. Stir with a wooden spoon until blended.

3. Shape sausage mixture into 1-inch balls, and place on lightly greased baking sheets. Press 1 olive deeply into each ball. Reroll using the palms of your hands if you need to reshape. Bake at 400° for 22 minutes or until lightly browned. Remove baking sheets from the oven using oven mitts.

4. Freeze Monster eyes for a few minutes. Serve and enjoy eating!
