Chocolate-Dipped Vanilla Bean Macaroons - Phase 3

Serving Size: 3 macaroons

Ingredients:

  • 1 cup (250 mL) raw almonds, ground into a fine meal
  • 1½ cups (375 mL) unsweetened shredded coconut flakes
  • ½ teaspoon plus ⅛ teaspoon (2.5 mL) sea salt
  • ½ teaspoon (2 mL) ground cinnamon
  • ½ cup (125 mL) stevia
  • ¼ cup (2 ounces/60 g) coconut butter, melted
  • 2 tablespoon pure vanilla extract
  • 3½ ounces (100 g) cacao powder
  • 1 teaspoon (5 mL) virgin coconut oil

Directions:

  1. Preheat the oven to 275°F (140°C). Line a baking sheet with parchment paper. Line a large plate with parchment paper.
  2. In a large bowl, stir together the ground almonds, shredded coconut, salt, cinnamon, stevia, melted coconut butter, and vanilla extract until thoroughly combined. The dough will be thick and sticky.
  3. With a 2-tablespoon (30 mL) retractable cookie scoop, scoop a ball of dough and pack it in so the top is flat. Release the dough onto the prepared baking sheet. Repeat with the rest of the dough, setting the macaroons about 2 inches (5 cm) apart on the baking sheet.
  4. Bake for 15 minutes, then rotate the pan and bake for 10 to 15 minutes more, until the macaroons are a bit golden around the edges. Watch them closely during the last 5 to 10 minutes.
  5. Let cool on the baking sheet for 10 minutes, then carefully transfer to a cooling rack to cool completely.
  6. In the top of a double boiler, melt the cocoa powder and coconut oil together over low-medium heat, stirring frequently until smooth. (Alternatively, melt them together in a small pot over low heat, stirring frequently.) Turn off the heat.
  7. Dip the flat base of each cooled macaroon into the chocolate and twirl the macaroon until the base is coated in chocolate. As you dip them, place each macaroon onto the parchment paper-lined plate, upside down, so the chocolate coating is facing upward. Freeze the macaroons for 10 to 15 minutes, or until the chocolate has hardened.
  8. Flip each macaroon chocolate-side down and drizzle the remaining chocolate on top (reheat the chocolate until liquid, if necessary). Freeze for 5 to 10 minutes, until the chocolate drizzle is firm.
  9. Store leftover macaroons in an airtight container in the fridge for up to 1 week. You can also wrap the macaroons in foil, place them in an airtight container or freezer-safe zip-top bag, and freeze for up to 1 month.

This spooky raspberry chocolate pudding has a rich chocolate taste and is very smooth and silky blended with tangy flavors of raspberry. It’s dairy and egg-free that can also be served as a chocolate dip.

SPOOKY RASPBERRY CHOCOLATE PUDDING – PHASE 3

Serving Size: 1 cup of Spooky Raspberry Chocolate Pudding

Ingredients: 

  • 1 1/2 cups of raspberries
  • 1/3 cup coconut milk
  • 4-6 drops stevia
  • 1/2 teaspoon lemon juice (from squeezed lemons)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup plus 1 tbsp cacao powder
  • 3 tablespoons melted coconut oil

Directions: 

  1. Blend all but the coconut oil until smooth and creamy.
  2. Add the oil and blend again to incorporate.
  3. Chill for at least 4 hours or cold and thickened.
  4. You can add chia seeds and raw cacao nibs as toppings. Serve and enjoy!

Our indulgence for today is not that sinful to destroy your healthy commitment, in fact now is the best time to treat yourself to a delectable Bittersweet Chocolate Truffle now that you’re on Phase 3!

Bittersweet Chocolate Truffle - Phase 3

Ingredients:

  • 8 ounces raw cacao powder 
  • 1/2 cup heavy whipped cream (made of egg whites and almond/coconut milk)
  • Assorted coatings, such as shredded coconut, finely chopped pistachios, almonds, or other coating of your choice.

Directions:

  1. Place raw cacao in a medium bowl. Bring cream to a boil in a small saucepan over medium-high heat; pour over raw cacao powder.

  2. Let sit 2 to 3 minutes, then whisk until smooth. Refrigerate (uncovered) until somewhat firm, about 1 hour.

  3. Spoon mounds (2 level teaspoons each) of chocolate mixture onto a large baking sheet lined with parchment or wax paper. Return to the refrigerator 15 minutes.

  4. With your hands, roll mounds into balls. Place desired coatings in shallow bowls; roll balls in coatings, pressing in and covering completely. Return to baking sheet; chill until set, about 30 minutes.

Chocolate Spiderweb Cupcakes - Phase 3Cupcakes:

  • 1/3 cup of almond flour
  • ¾ teaspoon baking powder
  • ⅛ teaspoon sea salt
  • ½ cup cocoa powder
  •  1½ tablespoons of coconut oil
  • ½ cup of stevia
  • 5 tablespoon of peach puree
  • 2 eggs
  • 1½ teaspoons vanilla extract

Chocolate Almond Butter Fudge Frosting:

  • 1 tablespoon coconut oil
  • ¼ cup almond butter
  • ¼ cup + 1 tablespoon cocoa powder
  • 1 tablespoon stevia

Directions

  1. Preheat your oven to 350°F / 175°C and line 8 muffin cups with liners.
  2. In a large bowl combine the wet ingredients and set aside. In a medium bowl, combine the dry ingredients and add this to the wet ingredients. Stir in just until combined. Do not over mix.
  3. Pour evenly into the muffin liners. If you want to make spiderwebs like designs, you need to be careful not to put too much batter in the liners because it’ll be more difficult if you have a slightly domed cupcake. The chocolate liners in this recipe were a little less than ⅔ full.
  4. Bake for 16 minutes. For the frosting, melt the coconut oil, almond butter and cocoa powder together in a pot or pan over low heat. When it’s completely melted and smooth, take it off the heat and add the stevia and stir until well combined. Let the cupcakes and frosting cool completely before icing. 
  5. Put the icing and draw out your spiderweb design on cupcakes.
  6. Enjoy them with family and friends!

Delectable Blueberry Dark Chocolate – Phase 3

Most of us would crave for some desserts while on the diet. Don’t feel guilty when you are feeling this because that’s completely normal!  Here’s some bittersweet dessert to brighten up your day! Get your dose of chocolates using this simple recipe!

Delectable Blueberry Dark ChocolateIngredients

  • 4 oz fresh blueberries
  • 3.5 oz dark raw cacao.
  • 4 tablespoon coconut oil
Instructions
  1. Wash the blueberries and place on a clean towel to dry.
  2. Line four muffin tin cups with paper liners.
  3. Add the dark cacao powder in a microwave-safe glass measuring cup. Add the coconut oil.
  4. Melt the dark cacao in the microwave: run the microwave in 30 second increments, stirring the chocolate in-between and rotating the measuring cup. Finish when most of the powder is melted (mine took 1 minutes). Stir until smooth and fully melted.
  5. Pour the melted chocolate into the paper liners, dividing it evenly. Divide the blueberries between the liners, allowing some to sink into the chocolate and some to remain on top.
  6. Refrigerate 1 hour prior to serving.

If you want a better version, make one at home. Grate raw cauliflower or chop it in a food processor. Riced cauliflower only has 20-38 calories, 4-6 grams of carbohydrates and has 2-3 grams of fiber per cup serving.

1. Mix equal amounts of egg whites with rice milk to make a low-calorie heavy cream substitute. Mix the ingredients until there are no more lumps in your mixture.

2. Wash strawberries and gently pat with paper towels until completely dry.

3. Dip the Strawberries in the heavy cream mixture and freeze for 30 minutes.

4. In a microwave, melt 1/2 cup of raw cocoa powder until smooth. Dip a toothpick into melted chocolate and draw a mouth and eyes on each ghost. You can also draw ghost’s tails.

5. Serve and enjoy eating!
