Journal of the American Heart Association published a recent study supporting these almonds as a perfect food for snacks. How did they performed this study?

They collected participants who all had high LDL (bad cholesterol) levels and formed them into two groups with each following a healthy diet for a duration of 12 weeks. On the first six weeks, the first group was given a 1.5-ounce portion of almonds to enjoy for a snack, with the other group a carbohydrate-rich muffin. Aside from the snack, both of the groups had the same diet. And then on the next six weeks, the groups switched snacks but with the same diet.

The researchers of that study were given the results showing that when the two groups snacked on the almonds, a reduce of both their LDL and total cholesterol levels were observed. And that their HDL (good) cholesterol levels were raised, the opposite when the groups ate muffins with the result of decreased HDl levels. But what’s more interesting is that the participants’ belly fat and waist circumference shrank even though their overall body weight did not change during the times when they were snacking on the almonds and muffins.

Note that both the muffin and the portion of almonds consisted nearly same number of calories, respectively 273 and 253, and both diets had the same overall number of calories. An obvious evidence supporting the idea that what’s making a diet healthy is not just the quantity but the quality of calories. And the fact that was mentioned in this article, that almonds are a rich source of protein, fiber and vitamin E, which muffins score much lower in, suggests that nutrients played a role in the results of the study. Approved to say that whenever you want some snack, reach for those that are nutrient-rich.

13 Tips on How To Avoid TOXINS from Your Kitchen

If you want a more healthy living, get rid of the existing toxins from your own kitchen!

Think of the time you are spending with just choosing and prepping the most nutritious food for your family, not knowing that the products you usually use in cooking, baking, storing and eating your food with may put your family’s health in danger. Mind that most of the kitchenware products you use like every day are commonly found with materials such as BPA, Teflon, lead, aluminum, phthalates, and melamine which are known to be endangering your health. Now, how can you be able to say that you are safe in your own kitchen? Well, prefer alternatives!

  1. Begin avoiding the usage of plastics as possible when it comes to food and beverage. Due to the chemicals which plastics were made, specifically BPA (bisphenol A), even the lowest dose of it have been found to cause cancers, impaired immune function, early puberty, diabetes, hyperactivity and obesity.   2. If you really prefer using plastic in the kitchen, choose BPA-free, PVC- free plastic #2 (High Density Polyethylene (HDPE)), #4 (Low Density Polyethylene (LDPE)), and #5 (Polypropylene (PP)) for these mentioned plastics were found safer than any other plastics.
  3. Don’t heat in the microwave. Know that those plastics which are labeled with “microwave-safe” only mean that they won’t actually melt but with the extreme heat of the oven, it’ll increase transference of chemicals.
  4. Don’t store fatty, greasy or acidic foods in plastics, and avoid using already scratched, cloudy or broken plastics for your food and beverages, again, chemicals gonna leach that easily.
  5. Wash plastics with your own hands to avoid wearing and possibly tearing it.
  6. Avoid the usage of hard plastic melamine dishes for they are made by combining the chemical melamine with formaldehyde. (Note that formaldehyde is considered a human carcinogen and studies state that they can leach from kitchenware into food).
  7. Use more stable materials for utensils and accessories such as bamboo, wood, stainless steel or silicone replacing your plastic version of them when cooking. They may melt or flake due to the extreme heat or wear down over time causing the chemicals to migrate into food.
  8. Use glass, 304 grade stainless steel, and food-grade silicone when it comes to food storage. They don’t leach chemicals into your food. Bamboo or wood (coated with a food-safe, non-toxic finish) and ceramic (with lead free glaze) works well too for they are safer.
  9. Get rid ofTeflon and any other chemical non-stick coatings. Know that Teflon is a coating produced with PFOA (perfluorooctanoic acid), also considered a human carcinogen. What’s making it a bit frightening is that when heated, your cookware coated with Teflon and other synthetic non-stick surfaces emit fumes that can even kill birds and possibly sicken people, even worse when overheated.
  10. Take precautions using your aluminum cookwares. Know that aluminum has been linked to brain disorders, as well as behavioral abnormalities and definitely considered a toxic substance. And since it is soft and a highly reactive metal, that it can transfer in measurable amounts into foods when used in cooking. That’s why, many have switched from aluminum to anodized aluminum. But still, it’s not the safest choice for cookware because even though it was treated and dipped into a chemical bath to make it a more durable layer so it can’t easily leach into food, the anodization can break down over the time.
  11. Glass, 304 stainless steel, cast iron and ceramic cookware, the safest materials for cookware and bakeware.
  12. Non-toxic cleaning products instead of using bleach, dyes, synthetic fragrances and ammonia.
  13. Avoid using abrasive materials with stainless steel cookware frequently for when they are deeply scratched and pitted, they can cause nickel and chromium to transfer to your food in measurable amounts. Though they are not that really toxic elements, not so much of concern then unless you have a specific allergy or sensitivity with it. But just for the sake of being safe, let’s cut that out.

Health is very important. Each and every one of us do deal seriously with taking good care of our own health. We avoid getting admitted to our doctors more often. Who’d want that syringe even though we know it only pains just like a bite of an ant? And think ahead of how much it will gonna cost? And what’s more devastating is that unknowingly, your health is taken into danger by your own things right inside your kitchen. And I’m definitely going to mention your plastic food containers. But what do plastic food containers really contain and in what ways can we access the health risks that they can cause?

Plastics. They, though not all of them, contain a chemical called BPA (bisphenol A), which is a toxin. And your own plastic water bottles, utensils and cutleries, baby bottles, cups, and plastic food containers could possibly contain this toxin. (Even paper cups you get from coffee shops)

What’s with BPA?

We’ve mentioned already that BPA stands for bisphenol A. Since 1960s, it has been used as an industrial chemical for the production of certain plastics and resins. But what’s with BPA? Based on researches, it was found that they seep into foods or beverages from containers that are made from BPA. And an exposure, in high or even low levels, from this toxic BPA is alarming due to its possible health effects to the brain, behavior and prostate gland of fetuses, infants and children. How do you feel about this so called BPA now?

If BPA is harmful, should I look for those BPA-free products instead?

Due to research findings that BPA should be avoided, BPA-free products has been created. The idea was brought up to get rid of those plastic products with BPA. But, a study from the journal Environmental Health Perspectives that was published stated that even BPA-free plastics contain chemicals with EA that stands for estrogenic activity, and that can cause results pertaining to health problems.

We had BPA, and now EA?

Let’s take a deep discussion with EA or what we call estrogenic activity. Now, chemicals that have these are those that mimic or counter the actions of naturally occurring estrogens. These chemicals are capable of binding with one or more of the body’s nuclear estrogen receptors.

Let’s say that these chemicals with EA is just like a counterfeit key fitting into a loose lock that when these chemicals activate the estrogen receptor, they cause an increase in circulating estrogen. And which in turn can cause problems, mentioning reduced sperm counts, early puberty among the females, altered function of the reproductive organs, increased rates of certain cancers, problems with infant and childhood development and obesity. Yes, you’ve read the last word right. You can get fat.

The above mentioned problems can happen with even the lowest doses of chemicals with EA to vulnerable populations such as pregnant women, developing fetuses, infants and children due to their high sensitivity.

Does that mean BPA-free is not EA-free?

I will repeat the question for you. Does that mean BPA-free is not EA-free? Well, absolutely! To prove this, let us investigate this study done by the Environment Health Perspectives.

500 plastic products were brought from places like Walmart, Trader Joe’s, Target and other major retailers. These plastic products are selected from all categories of plastic, including tupperware containers, wraps, bags and what have you. They cut these plastic products int pieces, placed them into liquids that contain the same chemicals found in food and drinks, subjecting them to stresses that mimic normal use such as UV light (sunlight), microwaving, or boiling and dishwashing.

Based on the results they accumulated, over 90% of the products leached estrogenic chemicals before they were even stressed, and after stressing essentially all of the products showed EA.

Refer to Stuart Yaniger’s statement, one of the lead authors of the study:

Baby bottles, plastic bags, plastic wrap, clamshell food containers, stand-up pouches: Just about anything you can think of that’s made plastic that food or beverages are wrapped up in, we found this activity. It was shocking to us.

And if you are asking how to identify which plastic products contain EA, it’s impossible to tell. But we can just refer to the results of the study saying that over 90% were found with EA and assume that all plastic products have EA.

Now the question is, in what ways do we acquire them that can definitely affect our health and even make us fat?

The fastest way of releasing chemicals from plastics is through exposure to heat. In eating, we use plastic utensils, and cutlery. In storing foods, we use trays, microwave-safe containers, and plastic lunch boxes. Then, we usually prepare food with ready to eat canned goods (in which in the case of acidic foods with the likes of tomatoes, fruit, beans and juice, chemicals are being released faster). In dishwashing, washing your plastic utensils in a dishwasher can also cause a chemical release when used subsequently. In drinking, plastic coffee mugs and water bottles do leach out BPA into your water faster when the plastic gets hot.   • Olive Oil
  • 1 or more boneless, skinless chicken breasts
  • Sea Salt
  • Pepper
  • Other spices or seasonings

  1. Heat the oven to 400⁰F and prepare the pan. Heat the oven to 400⁰F with a rack in the middle position. To prevent the chicken from sticking, rub the pan and one side of the parchment paper with olive oil.
  2. Prepare the chicken. Pat the chicken dry and rub with a little olive oil, if desired. Sprinkle with sea salt, pepper, and any other favorite seasonings.
  3. Transfer to the baking dish. Place the chicken breasts in the baking dish, spaced slightly apart. You can also tuck herbs or lemon wedges around the chicken for extra flavor.
  4. Cover with the parchment. Lay the parchment, oil-side down, over the chicken. Tuck the edges into the pan and press the parchment down so that it’s snug around the chicken. The chicken breasts should be completely covered with the parchment.
  5. Bake for 30 to 40 minutes. Transfer the chicken to the oven and bake for 30 to 40 minutes, until the chicken is completely opaque all the way through and registers 165⁰F on an instant-read thermometer.

  • Combine the safflower mayonnaise, chili powder, cayenne and 1/2 teaspoon salt in a large bowl. Add the chicken and toss to coat. Cover and refrigerate at least 2 hours or overnight.
  • Preheat a grill to medium low. Brush the grill grates with olive oil. Place the breadcrumbs in a shallow dish, then add the chicken, turning to thoroughly coat.
  • Grill the chicken, turning once, until golden brown and cooked through, 20 to 25 minutes per side.

  • 1/2 cup plus 1 tablespoon olive oil
  • 1/2 cup almond flour
  • 8 ounces  nitrate-free sausage, cut into 1/2-inch pieces
  • 1 1/2 pounds boneless skinless chicken thighs, quartered
  • Sea salt and freshly ground black pepper
  • 1 tablespoon tomato paste
  • 2 ribs celery, chopped (about 1 cup)
  • 1 large onion, chopped (about 2 cups)
  • 1 green bell pepper, chopped (about 1 1/2 cups)
  • 1/4 teaspoon cayenne pepper
  • 4 cloves garlic, finely chopped
  • 4 cups chicken broth
  • 2 tablespoons pickling spice
  • 1 1/2 pounds medium shrimp, 21-25 count, peeled and deveined, tails removed
  • 2 Okras (substitute for gumbo file)
  • Hot cooked quinoa, for serving

Directions:

  • In a cast-iron or other heavy-bottomed skillet, heat 1/2 cup of the olive oil over medium-high heat until very hot.
  • Add the almond flour and whisk until combined and just beginning to brown. Reduce the heat to medium-low and continue to cook, whisking occasionally, until it is a deep peanut butter brown color, 15 minutes. Set aside.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a Dutch oven or large pot over medium heat.
  • Add the sausage and cook until it is lightly browned. Remove with a slotted spoon to a bowl. Sprinkle the chicken pieces with 1/2 teaspoon salt and 1/4 teaspoon pepper and brown in the sausage drippings.
  • Remove from the pot and place in the bowl with the sausage. Stir in the tomato paste until smooth and darkens slightly (be careful not to burn), about 1 minute.
  • Add the celery, onions, peppers and cayenne to the pot and continue to cook until softened, 8 to 10 minutes. Add the garlic and cook until just aromatic, about 30 seconds.
  • Add the chicken broth and 2 cups water and bring to a simmer. Slowly whisk in the warm roux, a bit at a time, until combined.
  • Tie the pricking spice and add to the pot along with the chicken and sausage. Simmer all together until thickened and the flavors have blended, about 45 minutes.
  • Add the shrimp and okra and simmer until the shrimp are just cooked through and the gumbo has thickened, about 5 minutes.
  • Discard the pickling spice bundle. Taste and adjust seasoning with additional salt and pepper. Serve the gumbo over quinoa.
  • Note: Pickling spice contains chilies, coriander, cumin, ginger, black pepper, allspice, cinnamon, bay leaves, brown mustard, cloves and turmeric. You can make your own it you can’t find it premade.
